Roast Boneless Shoulder of Lamb

This delicious recipe is sure to be hit for a Sunday lunch. Simple to prepare, just add potatoes and vegetables. This can be done with a leg of lamb also.




1 boneless shoulder of lamb

3 cloves Garlic

A few sprigs of Rosemary

Olive oil


Crush the garlic and chop the rosemary leaves. Combine these in a bowl with a good few glugs of olive oil and let sit for a few minutes.

Meanwhile take a large knife and stab the lamb all over, have fun with it but be careful not to stab your hand or cut the string holding the shoulder together. 

Take some of the garlic and rosemary mixture and stuff it in to the holes with your finger, really make sure to get it in there. Any left over can be spread over the meat.

Cook at 325 for 20 mins per lb plus 20 mins. Enjoy!
